Spicy 3-Chile Sesame Chicken Stir Fry
Spicy 3-Chile Sesame Chicken Stir Fry
Serves 4

1 pound chicken, dark meat, skin removed cut into 1/2 inch pieces
1 tablespoon cornstarch
1 tablespoon naturally brewed soy sauce
1 tablespoon minced garlic
1 tablespoon minced ginger
2 tablespoons 3-Chile Sesame Oil
1 red bell pepper, cut into 1/2 inch pieces
1/2 cup unsalted roasted peanuts (optional)
1/2 pound snap peas (washed, ends removed), blanched
Steamed white rice, to serve

In a bowl, toss the chicken with the cornstarch and the soy sauce.

Heat a hot wok coated with the 3-Chile Sesame Oil, over high heat. Add the garlic and ginger and saute until soft, about 3 minutes. Add the chicken and saute until cooked through, about 4-6 minutes. Add the red peppers, peanuts and snap peas and continue to cook until heated through.

Plating
Divide the rice among four plates and top with the chicken stir fry.
