Ponzu-Pasta
Salad
Serves 4 |
1 pound
blanched fussilli pasta
1 pint cherry tomatoes, cut in half
1 cup shredded carrots
1/2 pound baby spinach, washed
1/4 cup scallion greens
1/2 -1/3 cup Ponzu
Vinaigrette
Salt and pepper to taste

In a
large bowl, combine the blanched fussilli, tomatoes, carrots,
spinach and scallions. Toss to coat with the Ponzu
Vinaigrette. Season to taste with salt and pepper.
Plating
Divide the salad evenly among four large pasta bowls. |
