 Ingredients:

dozen oysters
2 minced shallots
Juice of 2 lemons
1 tablespoon very finely minced lemongrass
1 teaspoon finely minced lemon zest
Directions:
In a small bowl, combine the shallots, lemon juice, lemongrass
and lemon zest.
Lightly top the oysters with the mixture and serve
on a bed of crushed ice.
