 Ingredients:
¼ cup diced tomatoes, cut ¼ inch dice
1 cup shredded carrots
½ pound baby spinach, washed and dried
¼ cup scallion greens
3 cups cooked Jasmine Rice
1/4 cup lemongrass-ponzu
vinaigrette*
Salt and pepper to taste
Directions:
In a large bowl, combine the tomatoes, carrots, spinach, scallions and rice.
Toss with
enough of the vinaigrette
to very lightly coat the rice. Season
to taste with the salt and pepper. |
