 Serves 4
1 cup water
1 cup sugar
8 kaffir lime leaves, de-stemmed, and finely minced
¼ chopped fresh mint, well washed
1 honeydew melon, cut in 1 inch cubes
1 papaya, cut in 1 inch cubes
1 mango, cut in 1 inch cubes
1 pineapple, cut in 1 inch cubes
Bamboo skewers, soaked on cold water
In a medium
saucepan over low heat, combine the water, sugar, kaffir lime leaves and the
mint. Heat the mixture until it is
reduced by about 80%; do not allow it to become syrupy.
Using a colander, strain out the kaffir lime leaves and the mint.
Prepare
a very clean hot grill or preheat the broiler. Thread the pieces of fruit onto the skewers, alternating with
the different fruits. Place the
satays on the grill and cook for about 2 minutes on each side. Remove from the grill and while still hot, brush the satays
with the sugar-kaffir lime-mint mixture and serve immediately. |
