Ingredients:
1 pound
cod or other fatty white fish
-- may substitute with zucchini, mushrooms or chicken
2 cups rice flour
4-5 cups club soda
1 teaspoon chile powder
2 Russet potatoes, washed, skin on, sliced 1/4 inch thick
1/4 cup Dim
Sum Dipper
1/2 cup store bought real mayonnaise
1/4 cup sliced scallions, green parts only
Salt and pepper to taste

Directions:
Pour
the rice flour and the chile powder into a medium bowl and slowly
whisk in the soda water until a light, pancake-like batter is
formed. Note: Not all of the soda water may be needed. Dredge the
fish in the batter.
Prepare a 375 F degree fryer. Fry the fish until golden brown,
remove, season with salt and let drain on paper towels. Fry the
potatoes until golden, remove, season with salt and let drain on
paper towels.
In a small bowl, combine the mayonnaise, Dim
Sum Dipper and sliced scallions.
Plating
Divide the fish and ‘chips’ evenly among four plates and
drizzle the outside of the plate with the sauce. Serve additional
sauce (for dipping) in small ramekins. |
